# Imperial Spiced Black

> Malt, sweet wood and a long anise finish.

- Time: 9 min
- Makes: 1 cup · 250 ml
- Hot · Caffeinated · Level: Easy

## Ingredients

- 300 ml water
- 1 bag black tea
- 1 stick (5 cm) cinnamon stick
- 1 star anise
- 1 tsp honey

## Method

1. Simmer the water with the cinnamon and anise for 4 min, low heat, lid on. Hard spices need a decoction, not an infusion.
2. Turn off the heat and wait 30 s (≈ 95 °C). Add the bag and steep 3 min, covered.
3. Lift out the bag without squeezing: squeezing releases bitter tannins. Strain the spices.
4. Sweeten with the honey off the heat.

To finish: The star anise itself floating in the cup.

Tip: Toast the cinnamon and anise for 40 s in the dry pan before adding water: the essential oils intensify.
